Olive Juice in Wine Spectator

We photographed Tessa’s headshot for the August 2009 issue of Wine Spectator magazine. The magazine published a story about her tapas restaurant, Sontes, and the fantastic assortment of fine wines she serves by the glass. Buying fine, expensive wine by the glass is a new concept. Normally, you have to buy it by the bottle and there’s no guarantee you’ll like it. Tessa can offer fine wines by the glass because she has a state-of-the art, temperature-controlled tap system that keeps her wines perfectly preserved between pours. The best part is that, if you’re only paying by the glass, you can afford to try multiple new wines without breaking the bank. Just ask Tessa for recommendations. She’s a licensed sommelier who geeks out on flavor profiles.
